Cake

1 Preheat the oven to 350°F. Grease a 9” x 13” baking pan. In a medium bowl, whisk 1 ½ cups flour, 1 ½ tsp. baking powder, and ½ tsp salt.

2 In a large bowl, using a handheld mixer on medium speed, beat 5 egg yolks and 1 cup sugar until smooth, then beat in 1 tsp vanilla.

3 In another large bowl, using a handheld mixer on medium speed, beat 5 egg whites until soft peaks form. Gradually add remaining ¼ cup sugar and continue to beat until stiff peaks form.

4 Add yolk mixture to dry ingredients and beat until combined. Add ½ cup milk and ¼ cup butter and beat until combined. Gently fold in egg whites until just combined. Pour batter into the prepared pan.

5 Bake cake until a tester inserted into the center comes out clean, about 30 minutes. Let cool.

Filling

1 In a medium bowl, whisk can of condensed milk, can of evaporated milk, ½ cup of milk, and 1 tsp vanilla.

2 Using a fork, poke holes all over the cake, then pour milk mixture evenly over the cake. Cover and let refrigerate until liquid is absorbed, about 1 hour

1 In a large bowl, using a handheld mixer on medium speed, beat 2 cups cream and ½ cup sugar until stiff beaks form.

3 Punch dough down. Turn onto a lightly floured surface, knead 1 cup raisins in, and roll into a 15”x9” rectangle brush with additional oil. Combine 3 tsp cinnamon and remaining ¼ cup sugar; sprinkle to within ½” of edges.

4 Tightly roll up, jelly-roll style, starting with a short side; pinch seam to seal. Place, seam side down, in a greased 9”x15” loaf pan. Cover and let rise until doubled, about 30 minutes.

5 Brush with oil. Bake at 375°F for 45-50 minutes or until golden brown.

The main components of jam are pectin, citrus and sugar. However, all three components can already be found naturally in fruit. The crunch you find in some fruit means they have a lot of pectin so we use apples to meet this requirement. Lemons and limes are known to be citrusy fruits and most others (especially dates) are known to be sweet. Jam can be made with any combination of fruits as long as these requirements are met, and adding honey is a great way to bring out some extra sweetness.

  • 15 apples, cored and quartered
  • 2 mangoes, peeled and deseeded
  • 1 pineapple, cored and chopped
  • 3 lemons, peeled and deseeded
  • 3 limes, peeled and deseeded
  • 12 oz blueberries
  • 2 lbs dates, deseeded
  • Honey

Directions

1 In a large pot, cook down 15 apples, 2 mangoes, 1 pineapple, 3 lemons, 3 limes, 12 oz blueberries, and 2 lbs dates on low for 8 hours.

2 Blend occasionally with a handheld blender to get the fruit juices out and prevent the fruit from sticking/burning to the bottom.

3 Add honey to taste if the sour citrus flavour is overpowering the sweet fruit.

Bumbleberry Crisp

  • 3 cups blueberries
  • 3 cups raspberries
  • 3 Tbsp all-purpose flour
  • 1/2 cup granulated sugar
  • 2 Tbsp lemon juice
  • 3/4 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter

Whipped Cream

  • 2 cups whipping cream
  • 1/2 cup granulated sugar

Directions

1 Preheat the oven at 350°F. Grease a 9” x 9” baking pan.

2 Arrange 3 cups of blueberries and 3 cups of raspberries in the greased baking pan. Sprinkle fruit with 3 Tbsp flour, ½ cup granulated sugar and 2 Tbsp lemon juice.

3 In a medium bowl, combine ¾ cup rolled oats, ½ cup brown sugar, and ½ cup flour. Cut in ⅓ cup butter until mixture is crumbly. Sprinkle over the fruit mixture.

4 Bake for 40 minutes or until the fruit is bubbling.

Whipped Cream

1 In a large bowl, using a handheld mixer on medium speed, beat 2 cups cream and ½ cup sugar until stiff beaks form.

2 Serve on crisp.

Old School RuneScape is my husband's favourite video game and this cake resembles the iconic OSRS cake so its the perfect birthday cake for him and any other OSRS fans.

  • 2 1/3 cup all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 eggs
  • 3/4 cup milk
  • 3/4 cup butter, melted
  • 1 Tbsp vanilla extract

Filling

  • 1 cup butter, softened
  • 1/4 tsp salt
  • 3 cups icing sugar
  • 3 Tbsp whipping cream
  • 1 tsp vanilla extract
  • 1 cup jam

Directions

Cake

1 Preheat the oven to 350°F. Line two circle cake pans with parchment paper.

2 In a large bowl, combine 2 ⅓ cups flour, 1 ½ cups sugar, 2 tsp baking powder, and ¼ tsp salt. Add 3 eggs, ¾ cup milk, ¾ cup butter, and 1 Tbsp vanilla and mix until smooth. Pour into prepared pans.

3 Bake at 350°F for 45 minutes or until a toothpick comes out clean. Let cool in the freezer.

Filling

1 Beat 1 cup butter with an electric mixer until creamy. Sprinkle ¼ tsp salt over butter and stir to combine.

2 Gradually add 3 cups of icing sugar, about ½ cup at a time and wait until completely blended before adding more.

3 Gradually add 3 Tbsp cream, about 1 Tbsp at a time. Once combined, beat on high for 30 seconds.

4 Add 1 tsp vanilla extract and stir.

5 Ice each cake with half of the icing, then spread one cup of jam over one of the cakes. Place the other cake on top of the jam layer.
